What You’ll Need
- 2 Ugli fruits
- 1 large orange
- 1 lemon
- 4.5 cups of sugar
- 1 package of pectin (1.75 oz)
- 3 cups of water
Method
Step One
Begin by thoroughly washing the Ugli fruits, orange, and lemon. Once clean, use a zester or grater to remove the zest from each fruit, being careful to not include any of the bitter white pith. After zesting, cut the fruits in half and squeeze the juice from each, setting the juice aside for later.
Step Two
Put the zest into a large pot, add the 3 cups of water, and bring to a boil. Reduce the heat and let it simmer for about 20 minutes.
Step Three
While the zest is simmering, cut the remaining white pith from the fruits and discard it. Also remove any seeds from the fruits. Then chop the fruit flesh into small chunks.
Step Four
Add the chopped fruit and juices to the pot. Stir in the pectin until it’s fully dissolved. Then, bring the mixture to a boil.
Step Five
Add the 4.5 cups of sugar to the pot and stir until it’s fully dissolved. Once the sugar is dissolved, bring the marmalade to a boil for one minute.
Step Six
Remove the pot from the heat. Pour the marmalade into sterilized jars, leaving about a ¼ inch of space at the top. Wipe the rims of the jars clean before applying the lids.
Step Seven
Process the jars in a water bath canner for 10 minutes. Allow the jars to cool completely before checking the seals. The lids should not flex up and down when the center is pressed. Store the jars in a cool, dark place. Enjoy your Ugli Fruit Marmalade!
