What You’ll Need
- 2 cans of ackee, drained and carefully rinsed
- 1 large bell pepper, sliced
- 1 medium red onion, finely sliced
- 2 cloves garlic, minced
- 1 medium carrot, julienned
- 1 medium zucchini, julienned
- 2 cups of broccoli florets
- 1 cup of snap peas
- 1/2 cup of corn kernels (optional)
- 1 tablespoon of olive oil
- 1 tablespoon of soy sauce, or to taste
- 1/4 teaspoon of black pepper, or to taste
- 1/4 teaspoon of salt, or to taste
- 1 tablespoon of fresh ginger, grated
- 1/2 teaspoon of turmeric powder
- 1/2 teaspoon of red chili flakes (optional)
- 1 lime, juiced
- Fresh cilantro for garnish (optional)
Method
Step One
Start by heating the tablespoon of olive oil in a large pan or wok over medium heat.
Step Two
Add the finely sliced red onion to the pan. Sauté the onion until it becomes translucent and starts to lightly brown.
Step Three
Now, add the minced garlic and grated ginger to the pan. Stir everything together and cook for one minute.
