What You’ll Need

  • 3 large ripe avocados
  • 1/2 cup fresh lime juice
  • 1/2 cup agave syrup
  • 1 teaspoon pure vanilla extract
  • 1/4 cup coconut oil, melted
  • Zest of 2 limes

Method

Step One

Start by cutting the avocados in half and remove the pits. Use a spoon to scoop out the avocado flesh and put it in a food processor.

Step Two

Add the fresh lime juice to the food processor. The lime juice not only adds a nice tangy flavor but also helps in preventing the avocado from browning.

Step Three

Pour in the agave syrup. Agave syrup is a great vegan sweetener. If you don’t have agave syrup, you can use maple syrup instead.

Step Four

Add the teaspoon of pure vanilla extract. This will provide a nice depth of flavor to the mousse.

Step Five

Slowly add the melted coconut oil while the food processor is running. The coconut oil will add a rich, smoothness to the mousse. Make sure the oil is melted and at room temperature, not hot, before adding.

Step Six

Step Seven
