What You’ll Need

  • 1 tablespoon Olive Oil
  • 2 cloves Garlic, minced
  • 1 Onion, chopped
  • 1 Red Bell Pepper, chopped
  • 1 Green Bell Pepper, chopped
  • 1 Carrot, chopped
  • 2 cups Broccoli florets
  • 1 cup Snow Peas
  • 1 cup Mushrooms, sliced
  • 1 Zucchini, chopped
  • 1/4 cup Soy Sauce
  • 1 tablespoon Cornstarch
  • 1 cup Vegetable Broth
  • 1 cup Tofu, cubed
  • 1/4 cup Cashews, roasted
  • 2 Green Onions, chopped for garnishing
  • Salt to taste
  • Pepper to taste
ALLERGENS: Garlic, Onion, Soy Sauce, Tofu, Cashews

Method

Step One

In a large pan, use medium heat to warm the olive oil. When ready, add the minced garlic and chopped onion, cooking them until they become fragrant and the onion is translucent which will take around 3-4 minutes.

Step Two

Next, add the chopped red bell pepper, green bell pepper, and carrot to the pan. Stir occasionally and cook for about 5 minutes or until the vegetables soften.

Step Three

Now add the broccoli florets, snow peas, sliced mushrooms, and chopped zucchini to the pan. Continue to stir and cook until these vegetables also soften, about 5-7 minutes.

Step Four

While the vegetables are cooking, in a small bowl, whisk together the soy sauce and cornstarch until it is smooth. Then gradually whisk in the vegetable broth to blend everything together.

Step Five

Pour the broth mixture into the pan with the vegetables and bring everything to a gentle simmer. Keep stirring until the sauce thickens which will take around 2 minutes.

Step Six

Add the tofu cubes to the pan and stir gently to prevent breaking the tofu, until it’s warmed through, usually about 2-3 minutes.

Step Seven

Season the dish with salt and pepper according to your preference. Then garnish with the roasted cashews and chopped green onions.

Step Eight

Serve the Vegan Mixed Vegetables hot out of the pan. Enjoy your meal!
