What You’ll Need

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsweetened almond milk
  • 1/3 cup canola oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • 2 cups fresh plums, pitted and sliced
  • 1/2 cup all-purpose flour (for streusel)
  • 1/4 cup brown sugar (for streusel)
  • 1/4 cup vegan butter, chilled and cut into small pieces (for streusel)
  • 1/2 teaspoon cinnamon (for streusel)

Method

Step One

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and set it aside.

Step Two

In a large bowl, combine the 2 cups all-purpose flour, 1 cup sugar, 1 teaspoon baking powder, 1/2 teaspoon baking soda and 1/4 teaspoon salt. Stir well to mix the ingredients.

Step Three

In another bowl, whisk together the 3/4 cup unsweetened almond milk, 1/3 cup canola oil, 1 tablespoon apple cider vinegar, and 1 teaspoon vanilla extract.

Step Four

Gradually add the wet ingredients to the dry ingredients, mixing well until the batter becomes smooth. Fold in the 2 cups of pitted and sliced fresh plums.

Step Five

Pour the batter into the prepared cake pan.

Step Six

To prepare the streusel topping, combine the 1/2 cup all-purpose flour, 1/4 cup brown sugar, 1/4 cup vegan butter and 1/2 teaspoon of cinnamon in another bowl. Use your fingers or a fork to mix the ingredients until the mixture becomes crumbly.

Step Seven

Evenly sprinkle the streusel topping over the plum batter in the cake pan.

Step Eight

Bake the cake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan before unmolding.
