Vegan Spicy Water Spinach Stir Fry

Blending Cultures Through Food

This dish hits all the right notes, and its explosion of flavors is a testament to the masterful balance of heat and sweetness typical of Singaporean cuisine – a fusion I’ve always admired in chefs like Violet Oon. The recipe’s rich play on tastes and textures also strikes a chord with my Cuban and Spanish background. Just like a Spanish Arroz con Pollo or a Cuban Ropa Vieja, it embodies the joyful dance between tradition and innovation – a dance I am oh-so-familiar with, both in the kitchen and the actual dance floor!

The Magic of the Stir Fry

The Vegan Spicy Water Spinach Stir Fry is a supreme example of how simple ingredients can be transformed into something spectacular. Just as we transform fresh ingredients into delectable tapas or invigorate a cocktail with tropical flavors, this dish turns water spinach and a few vegan seasonings into a plate of pure delight. The stir fry method seals in flavors, retains crunchiness, and lets the characteristics of each ingredient shine.

What’s fascinating about this Singaporean delicacy is its versatility. It pairs wonderfully with a steaming bowl of jasmine rice or alongside a heaping plate of vegan Char Kuey Teow. You can also see the influence of similar dishes in this recipe, such as the Filipino Adobong Kangkong.

The joy I derive from this delicious Vegan Spicy Water Spinach Stir Fry recipe is twofold – the satisfaction of preparing this vibrant dish and the pleasure of tasting its unique flavors. I just know you’re going to love it as much as I do – happy cooking!

What You’ll Need

  • 2 lbs water spinach
  • 4 tablespoons vegetable oil
  • 8 cloves garlic, minced
  • 3-4 red bird eye chilies, finely chopped
  • 2 tablespoons vegan soy sauce
  • 1 tablespoon vegan oyster sauce
  • 1 1/2 tablespoons coconut sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • Sesame oil, to taste
ALLERGENS: Soy

Method

Step One

First, wash and drain the water spinach very well. Make sure there’s no residual dirt left on the leaves.

Step Two

Heat up a large wok or frying pan over medium heat, then add the vegetable oil. Allow it to warm up for a while, making sure it doesn’t get too hot.

Step Three

Add the minced garlic and chopped bird eye chilies to the heated oil in the wok. Stir them around until the garlic turns golden and releases its fragrance.

Step Four

Now, add in the water spinach to the wok. Stir it continuously, allowing the leaves to wilt from the heat of the wok.

Step Five

Drizzle the vegan soy sauce and vegan oyster sauce onto the ingredients in the wok. Continue to stir, mixing the ingredients and ensuring the sauces are well distributed.

Step Six

Next, sprinkle the coconut sugar, salt, and ground black pepper over the stir-fry. Stir everything well again to ensure that the spices are evenly integrated. Cook this for around five minutes on high heat.

Step Seven

For the final touch, drizzle some sesame oil on top to enhance the flavors. Your Vegan Spicy Water Spinach Stir Fry is ready to serve hot. It’s a perfect addition to your vegan meal. Enjoy!
