Vegetable and Quinoa Tian with Fresh Herbs served with Lime and Mint Vegan Yogurt Sauce.A Farmhouse Classic Reimagined

The dish takes me back to lazy afternoons in the South of France, where the art of savoring the simplest of ingredients is just as important as the final dish. At its core, a tian is a vegetable dish cooked slowly in the oven until the flavors meld beautifully together—a rustic staple in every Provencal home. I’ve taken this rustic base, incorporated some nutrient-packed quinoa and topped it off with a modern and refreshing Lime and Mint Vegan Yogurt Sauce. While this dish draws on humble origins, I give an appreciative nod to the avant-garde cuisine of Jean-Christophe Novelli, whose innovative approach to French gastronomy sparked my creativity.

A Dish That Reflects Diversity

Having been born and raised in New York – a city teeming with cuisines from around the world – I love taking well-loved recipes from distant shores and adding my personal touch to them. The Vegetable and Quinoa Tian with Fresh Herbs is no different. At its heart, this dish personifies diversity—a variety of vegetables working harmoniously together, each bringing something unique to the table, much like the appetizingly varied culinary scene of my home city.

This dish would perfectly complement a leafy green salad with a bright vinaigrette or perhaps a hearty ratatouille, another French farmhouse classic. It has all the makings of a wonderful addition to any dinner party, or as a nourishing meal you can whip up for yourself after a long day.

So whether you’re someone heavily steeped in culinary adventures, or just someone who appreciates a simple, wholesome meal, give the Vegetable and Quinoa Tian with Fresh Herbs served with Lime and Mint Vegan Yogurt Sauce a try. I guarantee it’ll be love at first bite!

What You’ll Need

  • 2 cups of uncooked quinoa
  • 4 cups of vegetable broth
  • 3 tablespoons of olive oil
  • 1 yellow bell pepper, diced
  • 1 red bell pepper, diced
  • 2 medium zucchinis, diced
  • 2 medium yellow squash, diced
  • 1 large onion, diced
  • 3 cloves of garlic, minced
  • 1 can of diced tomatoes (14.5 oz.)
  • 1 teaspoon of salt
  • ½:
  • 2 cups of unsweetened vegan yogurt
  • Zest and juice of 1 large lime
  • 1/4 cup of finely chopped fresh mint leaves
  • 1/2 teaspoon of salt
ALLERGENS: None

Method

Step One

Start by cooking the quinoa. Place the quinoa and vegetable broth in a medium saucepan over high heat. Bring it to a boil, then reduce the heat to low, cover and let it simmer for 15-20 minutes, or until all the liquid is absorbed and quinoa is fluffy.

Step Two

While the quinoa is cooking, prepare the vegetables. Heat the olive oil in a large skillet over medium-high heat. Add the diced yellow and red bell peppers, zucchinis, yellow squash, onion, and minced garlic. Sauté until the vegetables are softened, about 10 minutes.

Step Three

Add the canned diced tomatoes, along with their juice, to the skillet. Stir well to combine. Season with salt and black pepper. Let the mixture cook for another 5 minutes so that the flavors can meld together.

Step Four

Remove the skillet from heat and stir in the cooked quinoa. Add fresh thyme and rosemary leaves, and stir once more to distribute the herbs evenly through the mixture.

Step Five

In the meantime, prepare the vegan yogurt sauce. In a small bowl, combine the unsweetened vegan yogurt, the zest and juice of one lime, finely chopped fresh mint leaves, and salt. Stir until all the ingredients are well combined.

Step Six

Serve the vegetable and quinoa tian with a drizzle of the lime and mint vegan yogurt sauce on top. Enjoy your healthy and delicious meal!
