What You’ll Need

  • 1½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • 1 large ripe white sapote, peeled and mashed (about 1 cup)
  • 2 ripe bananas, mashed
  • 2 large eggs
  • ¼ cup unsalted butter, melted
  • ¼ cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts, optional
  • Cooking spray for greasing the pan

Method

Step One

Preheat your oven to 350°F (175°C). Use cooking spray to grease a 9×5-inch loaf pan, then set it aside.

Step Two

In a large bowl, combine the all-purpose flour, granulated sugar, brown sugar, baking soda, salt, and ground cinnamon. Mix until they are adequately blended together.

Step Three

Step Five

Transfer the batter into the greased loaf pan. Smooth the top with the back of a spoon or spatula.

Step Six

Place the pan into the preheated oven and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

Step Seven

Once done, remove from the oven and let it cool in the pan for about 10 minutes. After that, transfer the bread from the pan to a wire rack to cool completely.
