What You’ll Need

  • 2 cups wild leeks, sliced
  • 1 bunch Swiss chard, chopped
  • 1 frozen puff pastry sheet
  • 2 large eggs
  • 1/2 cup heavy cream
  • 1 cup grated Gruyère cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
ALLERGENS: eggs, milk, wheat

Method

Step One

Preheat your oven to 375 degrees Fahrenheit. Thaw the frozen puff pastry sheet as per the package instructions.

Step Two

In a large skillet, heat the olive oil over medium heat. Add the wild leeks and saute until they become tender. This should take about 5 minutes.

Step Three

Add the chopped Swiss chard to the skillet with the leeks. Cook until the chard wilts and all the liquid has evaporated. This should take another 5 minutes.

Step Four

Roll out the puff pastry on a lightly floured surface, then transfer it to a tart pan or a baking sheet. Prick the bottom with a fork to prevent puffing.

Step Five

In a medium bowl, whisk together the eggs, heavy cream, salt, and black pepper. Stir in the cooked leek and chard mixture and the Gruyère cheese.

Step Six

Pour the mixture into the prepared puff pastry. Spread evenly.

Step Seven
