  • 6 heads of chicory (endives), trimmed and halved lengthwise
  • 12 slices of ham
  • 3 cups of grated Gruyère cheese

  • 2 tablespoons of all-purpose flour
  • 2 cups of whole milk
  • 1 teaspoon of Dijon mustard
  • Salt and black pepper to taste
  • 1/4 teaspoon of ground nutmeg
  • 1/2 cup of fresh bread crumbs
  • 2 tablespoons of chopped fresh parsley (optional, for garnish)

Method

Step One
