What You’ll Need

  • 2 lbs giant taro, peeled and cubed
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 Tbsp ginger, minced
  • 2 Tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 15 oz can coconut milk
  • 2 cups vegetable broth
  • 1 Tbsp curry powder
  • 1 tsp ground turmeric
  • 1/2 tsp ground cayenne pepper (optional)
  • 2 medium tomatoes, chopped
  • 1 cup green peas (fresh or frozen)
  • Salt to taste
  • Fresh cilantro, chopped for garnish
  • Cooked rice or naan for serving

Method

Step One

Heat the vegetable oil in a large pot over medium heat. Add the cumin seeds and mustard seeds, and cook until they begin to sizzle and pop, about 1-2 minutes.
