What You’ll Need
- 1 1/2 pounds of lean beef, cut into 1 inch pieces
- 1 red bell pepper, cut into 1 inch pieces
- 1 green bell pepper, cut into 1 inch pieces
- 1 red onion, cut into chunks
- 1 zucchini, cut into 1/2 inch slices
- 12 cherry tomatoes
- For marinade:
- 1/2 cup of olive oil
- 3 cloves of garlic, minced
- Juice of 1 lemon
- 2 tablespoons of red wine vinegar
- 1 tablespoon of dried oregano
- Salt and pepper to taste
- Wooden or metal skewers
Method
Step One
To start, prepare the marinade. In a medium bowl, combine 1/2 cup of olive oil, minced garlic, juice of 1 lemon, 2 tablespoons of red wine vinegar, and 1 tablespoon of dried oregano. Season with salt and pepper to taste. Mix well.
Step Two
Next, place the 1 1/2 pounds of lean beef pieces in the bowl with marinade. Toss well to ensure all pieces are evenly coated. Cover the bowl and marinate in the refrigerator for at least 2 hours or overnight for maximum flavour.
Step Three
While the beef is marinating, prepare the vegetables. Cut a red bell pepper, a green bell pepper, a red onion and a zucchini into 1 inch pieces and 1/2 inch slices respectively. Set aside 12 cherry tomatoes.
Step Four
After the beef has marinated, assemble the skewers. Start with a piece of beef, then add a piece of red pepper, green pepper, onion, and zucchini. Follow this pattern until all ingredients have been used, finishing with a cherry tomato. Repeat this process with the remaining skewers.
Step Five
