What You’ll Need

  • 1 and 1/2 cups of mashed ripe black sapote
  • 1 cup of mashed ripe bananas
  • 2 cups of all-purpose flour
  • 1 and 1/2 cups of sugar
  • 1/2 cup of unsalted butter, softened
  • 1/4 cup of vegetable oil
  • 3 large eggs
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of cinnamon
  • 1/4 teaspoon of nutmeg
  • 1 teaspoon of vanilla extract
  • 1/2 cup of chopped pecans (optional)
ALLERGENS: Wheat, Eggs, Milk, Pecan

Method

Step One

Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.

Step Two

In a large bowl, combine the mashed black sapote and bananas. Add the softened butter and vegetable oil, then mix until well combined.

Step Three

Beat in the sugar gradually, then add the eggs one at a time, making sure to beat well after each addition.

Step Four

In a separate bowl, mix together the flour, baking soda, salt, cinnamon, and nutmeg.

Step Five

Add the dry ingredients to the sapote and banana mixture, mixing until just combined. Stir in the vanilla extract.

Step Six

If using, fold in the chopped pecans.

Step Seven

Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
