  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 tbsp all-purpose flour
  • 1 cup fresh blueberries (plus extra for topping)
  • 1/4 cup blueberry jam or preserves

Blueberry Cheesecake Recipe

Step One

Preheat your oven to 325°F (163°C). In a medium bowl, mix 1 1/2 cups graham cracker crumbs, 1/4 cup granulated sugar, and 1/2 cup melted unsalted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then set aside to cool.

Step Two

In a large bowl, beat 16 oz softened cream cheese until creamy. Add 1 cup granulated sugar and 1 tsp vanilla extract, and mix until smooth. Beat in 2 large eggs, one at a time, mixing well after each addition. Blend in 1/2 cup sour cream, 1/2 cup heavy cream, and 1 tbsp all-purpose flour until the mixture is smooth and well combined.

Step Three

Gently fold 1 cup fresh blueberries into the cheesecake batter. Pour the batter over the cooled crust in the springform pan, spreading it evenly.

Step Four

Place the pan on a baking sheet and bake in the preheated oven for 55-65 minutes, or until the center is just set and slightly jiggly. Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour.

Step Five

Remove the cheesecake from the oven and let it cool completely at room temperature. Refrigerate for at least 4 hours, or overnight, to set.

Step Six

Before serving, warm 1/4 cup blueberry jam or preserves in the microwave for a few seconds to make it easier to spread. Gently spread the jam over the top of the cheesecake, then garnish with extra fresh blueberries. Slice and enjoy!
