What You’ll Need
- 1 medium breadfruit (about 2 pounds)
- 2 ripe mangoes, diced
- 1 cup pineapple chunks
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and finely chopped
- 1/4 cup fresh lime juice
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Method
Step One
Preheat your oven to 375°F (190°C). Rinse the breadfruit thoroughly and place it on a baking sheet. Poke a few holes in the breadfruit with a fork to allow steam to escape during baking.
Step Two
Bake the breadfruit in the preheated oven for about 60-90 minutes, or until it is tender when pierced with a fork. Allow it to cool slightly, then peel off the skin and remove the core. Cut the breadfruit into bite-sized cubes and set aside.
