On balmy Miami nights or at any gathering in my home, nothing champions the evening quite like a silky serving of Cherimoya Ice Cream. Hailing from my Caribbean roots and with a hint of Spanish indulgence, this tropical delight harnesses the unique flavor of the cherimoya fruit and dances a delicious duet with rich cream and vanilla. Take a virtual trip to Cuba and Spain in one bite and let your taste buds dance to the rhythm of these enchanting flavors.

The Star Ingredient: Cherimoya

Also known as the “custard apple”, cherimoya is a fruit loved for its creamy texture and sweet, nuanced flavor that could be described as a blend of banana, pineapple, peach, and strawberry. Originally from the Andean valleys of Ecuador, Colombia, and Peru, it has become a vital part of Cuban cuisine, where the fruit’s tropical flavor finds harmony in the sizzling aromatic dishes. It stands out in our Cherimoya Ice Cream, bringing a fresh, sweet yet slightly tart flavor profile, that is both irresistible and refreshing.

Health Benefits and Taste

But the magic of this recipe is not only in its waltz of flavors but also in its health benefits. Yes, this indulgence has a virtuous side! Cherimoya is a sneaky source of essential nutrients, including fiber, vitamin C, and potassium. When combined with the calcium from the whole milk and cream, it creates a dessert that not only tantalizes the tongue, but also contributes to a healthier diet. The pinch of salt and a dash of lemon juice intensify the cherimoya’s flavor, while the vanilla gives it an aromatic richness that is deeply satisfying.

While we’re indulging in the wonders of the decadent Cherimoya Ice Cream, don’t overlook the pairing possibilities. A small bowl of this frozen delight works wonders when served after a selection of spicy tapas, or alongside a traditional paella. Its creamy texture and layered fruity flavors are just the thing to tame the heat and complement the flavors of these iconic dishes.

Like rhythm in dance, balance is key in cuisine. And this decadent dessert strikes just the right balance between health and indulgence. Every time I serve it, I’m transported back to my mother’s kitchen in Miami, filled with love, laughter, and delectable dishes. So let the island breeze cool your day and try the Cherimoya Ice Cream. You’ll understand why it holds such a special place in my kitchen and in my heart.

What You’ll Need

  • 2 ripe cherimoyas
  • 1 cup of whole milk
  • 2 cups of heavy cream
  • 3/4 cup of granulated sugar
  • 1 tablespoon of pure vanilla extract
  • Pinch of salt
  • 1 tablespoon of lemon juice
  • 6 fresh mint leaves (optional)
ALLERGENS: milk, cream

Method

Step One

First, cut the cherimoyas in half and scoop out the pulp, making sure to remove all the seeds. The seeds are not edible. Once all pulp is scooped out, use a blender or food processor to puree the cherimoya pulp until it is smooth.

Step Two

Next, in a large saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat the mixture over medium heat, stirring constantly until the sugar has fully dissolved.

Step Three

Once the sugar is fully dissolved, remove the saucepan from the heat. Stir in the pureed cherimoya, pure vanilla extract and pinch of salt. Make sure everything is well combined.

Step Four

Allow the mixture to cool completely. Once cooled, add in the lemon juice and give it a good stir.

Step Five

Transfer the mixture into an ice cream maker and churn according to the manufacturer’s instructions. This usually takes about 20-25 minutes.

Step Six

If you chose to use the fresh mint leaves, chop them finely and mix them into the ice cream during the last few minutes of churning.

Step Seven

Once the mixture has reached the consistency of soft serve, transfer it into an airtight container and freeze for at least 2 hours, or until firm.

Step Eight

Serve your homemade cherimoya ice cream in bowls or ice cream cones, and enjoy as a refreshing dessert or snack!
