What You’ll Need

  • 3 bulbs of elephant garlic
  • 2 large egg yolks
  • 1 cup of extra virgin olive oil
  • 1 lemon, juiced
  • 1 tablespoon of Dijon mustard
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of white pepper
  • 2 tablespoons of fresh chopped parsley
  • Fruit of choice for serving

Method

Step One

Start by peeling the garlic. Cut off the top of each bulb and peel away the loose papery skin. Arrange the bulbs on a piece of foil, cut side up, drizzle with a bit of olive oil, and wrap them up.

Step Two

Roast the wrapped garlic in an oven preheated to 400 degrees Fahrenheit for about 40 minutes, or until the cloves are soft and lightly golden. Advice: Don’t forget to handle with care afterwards, the garlic will be very hot. Allow it to cool enough to handle, then squeeze the soft, roasted garlic out of each clove.

Step Three

Put the roasted garlic, egg yolks, lemon juice, Dijon mustard, salt, and white pepper into a blender or food processor. Blend until you have a smooth, creamy mixture.

Step Four

Start adding the olive oil, a little at a time, blending after each addition, until you have added it all and your aioli sauce is thick and creamy. It’s very affordable – if your aioli seems too thick, blend in a little more lemon juice or some warm water to thin it to the consistency you like.

Step Five

Stir in the chopped parsley by hand, then transfer the aioli to a serving bowl or jar. It can be served immediately, but the flavors will meld and improve if you cover and refrigerate it for an hour or two before serving it.
