Fava Bean Puree with Garlic and Lemon

There’s something transcendental about a well-made vegetable puree, and this Fava Bean Puree with Garlic and Lemon is a prime example. Rooted deeply in the traditions of Mediterranean cuisine, it’s a delightful fusion of bold flavors and healthful simplicity that always seems to impress my palate. As someone raised in Seattle amidst the lush bounty of the Pacific Northwest, I’ve come to appreciate the unique ways diverse ingredients can be combined to form new, yet familiar, tastes. The fava bean, or “broad bean” as it’s often called, is a staple in many cultures and brings a robust, earthy flavor to this dish which is beautifully complemented by the fresh zing of lemon juice and the comforting warmth of garlic.

The Elegance of Simplicity

The minimalist nature of this Fava Bean Puree allows each component to shine. The creamy texture of the beans provides a perfect canvas for the flavors of garlic and lemon to truly stand out. Drizzling in extra virgin olive oil not only enhances the richness but also adds a dose of healthy fats, making this dish as nutritious as it is delicious. If you’re into food with a pedigree, you might be pleased to know that fava beans are packed with protein, fiber, and various vitamins and minerals. They’re particularly high in folate and iron, making this dish as beneficial for your body as it is satisfying to your taste buds.

Versatility on Your Plate

One of the reasons I keep coming back to this Fava Bean Puree with Garlic and Lemon is its versatility. It can be served as a hearty dip with pita bread or raw vegetables, making it a perfect appetizer for gatherings. Alternatively, consider spreading it on toast as part of a flavorful breakfast or snack. This puree also pairs remarkably well with grilled meats and seafood—especially succulent shrimp or salmon, which might remind you of dishes like hummus or even baba ghanoush but with a unique flair provided by the fava beans.

For me, food isn’t just about taste, it’s also about the experience and the journey. On my trips to Japan, I always find new inspirations that inevitably make their way into my cooking. While this recipe is undeniably Mediterranean, the simplicity and harmony of its ingredients resonate with the Japanese culinary principles I hold dear.

If you’re curious to explore more recipes like this, the classic hummus or the vibrant baba ghanoush might be worth a try. Both share the same spirit of blending simple ingredients into something extraordinary. Next time you’re looking for a dish that’s nutritious, easy to prepare, and versatile, give this Fava Bean Puree with Garlic and Lemon a go. I promise it won’t disappoint.

What You’ll Need

  • 2 cups dried fava beans
  • 6 cups water
  • 4 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp ground cumin (optional)
  • 1/4 cup chopped fresh parsley (optional, for garnish)
  • 1/4 cup finely chopped spring onions (optional, for garnish)
ALLERGENS: Fava beans, Garlic, Olive oil

Method

Step One

Rinse the dried fava beans thoroughly under cold water. Place the beans in a large bowl and cover with water. Let them soak overnight or for at least 8 hours. After soaking, drain the beans and set them aside.

Step Two

In a large pot, combine the soaked fava beans and 6 cups of water. Bring to a boil over high heat, then reduce the heat to medium-low and simmer. Cook for about 45-60 minutes, or until the beans are tender. Skim off any foam that forms on the surface during cooking. Drain the cooked beans and set aside.

Step Three

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes, or until fragrant but not browned.

Step Four

Add the cooked fava beans to the skillet with the garlic. Stir to combine and cook for an additional 5 minutes, allowing the flavors to blend.

Step Five

Remove the skillet from heat and transfer the fava bean mixture to a food processor or blender. Add the lemon juice, salt, pepper, and ground cumin (if using). Blend until smooth, adding a bit of water if necessary to achieve the desired consistency.

Step Six

Taste the puree and adjust the seasoning if needed. Transfer the fava bean puree to a serving bowl. Garnish with chopped fresh parsley and finely chopped spring onions if desired. Serve warm or at room temperature with pita bread, crackers, or as a dip for vegetables.
