The vibrant hues of the ingredients captivated me, reminding me of the rustic charm often found in traditional Asian cuisine. This isn’t your everyday stir-fry; it’s a celebration of flavors, a collision of the East and the West, much like my own culinary journey.
A Celebration of Flavours
In every adventurous bite, you’re taken on a culinary tour across Asia. The chicken, succulent and seasoned to perfection, dances harmoniously with the Chinese egg noodles’ delicate texture. The hint of garlic and ginger amidst the fresh crunch of bell peppers and onions rings a familiar bell to anyone acquainted with oriental cuisine. It’s a symphony of flavors that rivals the complexity and depth of my beloved sushi and seafood dishes.
Inspired by the works of culinary maestros like Wolfgang Puck, this recipe remains true to its Chinese roots while embracing my passion for simplifying and deconstructing otherwise complex dishes. It’s a recipe that’s always ready to evolve, making it a joy to revisit and revise.

What You’ll Need
- 1 lb boneless chicken breasts, cut into bite-sized pieces
- 12 oz Chinese egg noodles
- 1 bell pepper, thinly sliced
- 1 medium size onion, thinly sliced
- 4 cloves garlic, minced
- 2 teaspoons fresh ginger, grated
- 3 green onions, chopped
- 2 tablespoons canola oil
- 1/2 cup soy sauce
- 1/4 cup hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1 tablespoon cornstarch
- 1 teaspoon fish sauce
- 1 teaspoon sesame oil
- Salt to taste
- Black pepper to taste
- 1/2 cup water
- Fresh cilantro, for garnish
- Sesame seeds, for garnish
Method
Step One
Start by cooking the Chinese egg noodles according to the packet instructions, then rinse under cold water and set aside.
Step Two
In a large wok or pan, heat the canola oil over medium-high heat. Once hot, add the chopped chicken breasts, season with the salt and pepper, and cook until they turn golden brown and are cooked through. Once cooked, remove the chicken from the pan and set aside.
Step Three
Using the same wok, sauté the sliced bell peppers and onions. Add the minced garlic, grated ginger, and chopped green onions to the pan, and stir-fry for a couple of minutes until the vegetables are tender and aromatic.
Step Four
In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, sugar, cornstarch, fish sauce, and sesame oil to make the sauce. Add the 1/2 cup of water to dilute the sauce slightly.
Step Five
Return the cooked chicken to the wok, then pour in the sauce. Mix everything together and keep stirring for a couple of minutes until the sauce thickens and coats the chicken and vegetables evenly.
Step Six
Finally, toss in the cooked noodles and stir-fry the mixture for a few more minutes until everything is well combined, and the noodles have absorbed the flavors of the sauce.
Step Seven
Freshly garnish your Fish Fragrant Chicken Stir Fry Noodles with sesame seeds and cilantro before serving. Enjoy hot for best taste!
