Why I Love French Grilled Halloumi and Veggie Wrap with Lemon-Yogurt Sauce
If you’re like me and you love versatile and hearty meals that deliver on taste and nutrition, the Grilled Halloumi and Veggie Wrap with Lemon-Yogurt Sauce will surely excite your palate. Inspired by the endless array of international flavors that populate the city I call home, this particular dish reminds me of the selling power of a New York food cart. Yet, it holds onto its French-inspired simplicity and favors the raw, delicious flavors of each ingredient. Nestled in the vibrant neighborhoods of Queens are many Greek immigrants whose influence has sparked my own passion for dishes like this, lusting after their authentic gyros and pitas.
A Multicultural Culinary Experience
Similar to the myriad of flavors you’d experience with a bite of a Tunisian Shawarma or a savory crêpe from a Parisian street vendor, the Grilled Halloumi and Veggie Wrap with Lemon-Yogurt Sauce never falls short with its variety of textures and flavors. It’s a nod not only to my predilection for layered, dynamic dishes but also to the streets of New York, a true collage of world cultures fueled by an endless aspiration to experiment and evolve.
Chef Inspirations and Extravagant Pairings
The dynamic French Chef, Éric Ripert, who intricately melds tastes from around the globe, played a big role in my culinary exploration. This recipe might not be directly influenced by him, yet the spirit that he embodies, of embracing various culinary traditions, has always kept me open to incorporating bold and fresh elements.
When it comes to pairing, this wrap is incredibly accommodating. Envision serving it alongside a light Nicoise salad to keep the French theme or for a more hearty option, you could explore a side of creamy Cacio e Pepe pasta. Versatility is the name of the game here.
Inspired by the streets of New York, its multicultural influences, and my own love for mingling simple, high-quality ingredients into sublime and hearty dishes, the Grilled Halloumi and Veggie Wrap with Lemon-Yogurt Sauce brings the world onto your plate in one tasty bundle.
What You’ll Need
- 12 ounces of halloumi cheese, sliced into 1/2-inch pieces
- 3 large bell peppers, seeded and cut into thin slices
- 2 medium zucchinis, sliced lengthwise into 1/4-inch pieces
- 1 red onion, thinly sliced
- 1 yellow squash, sliced lengthwise into 1/4-inch pieces
- 6 large tortilla wraps
- 2 tablespoons of olive oil
- 1/2 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 cup of Greek yogurt
- 2 tablespoons of lemon juice
- 1 garlic clove, finely chopped
- 1/2 teaspoon of lemon zest
- 2 tablespoons of finely chopped fresh mint
- 1 tablespoon of honey
Method
Step One
Preheat your grill or grill pan over medium heat. In a large bowl toss the bell peppers, zucchinis, onion, and squash in olive oil, 1/4 teaspoon of salt and 1/4 teaspoon of black pepper.
Step Two
Once the grill is preheated, arrange the vegetables on the grilling surface. Cook until they are tender and marked by the grill, typically for about 4-5 minutes per side. Remove from the grill and set aside.
Step Three
Next, place the sliced halloumi cheese on the grill. Grill the cheese until it is marked and beginning to melt, usually for about 2-3 minutes per side. The cheese should be soft but still hold its shape. Remove from the grill and set aside.
Step Four
While the vegetables and cheese are grilling, prepare the lemon-yogurt sauce. In a small bowl combine the Greek yogurt, lemon juice, garlic, lemon zest, chopped mint, honey, remaining salt and pepper. Mix until all ingredients are well incorporated.
Step Five
Assemble your wrap. Lay a tortilla flat, spread a generous amount of the lemon-yogurt sauce across the center. Layer on the grilled vegetables, followed by slices of grilled halloumi. Fold the tortilla wrap, tucking in the edges as you go. Repeat for the remaining tortillas.
Step Six
Once all wraps are assembled, slightly grill each wrap on the grill for about a minute per side, just until the tortilla is crisp and the insides are warm. Serve immediately and enjoy!
