What You’ll Need

  • 12 ounces of halloumi cheese, sliced into 1/2-inch pieces
  • 3 large bell peppers, seeded and cut into thin slices
  • 2 medium zucchinis, sliced lengthwise into 1/4-inch pieces
  • 1 red onion, thinly sliced
  • 1 yellow squash, sliced lengthwise into 1/4-inch pieces
  • 6 large tortilla wraps
  • 2 tablespoons of olive oil
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 cup of Greek yogurt
  • 2 tablespoons of lemon juice
  • 1 garlic clove, finely chopped
  • 1/2 teaspoon of lemon zest
  • 2 tablespoons of finely chopped fresh mint
  • 1 tablespoon of honey

Method

Step One

Preheat your grill or grill pan over medium heat. In a large bowl toss the bell peppers, zucchinis, onion, and squash in olive oil, 1/4 teaspoon of salt and 1/4 teaspoon of black pepper.

Step Two

Once the grill is preheated, arrange the vegetables on the grilling surface. Cook until they are tender and marked by the grill, typically for about 4-5 minutes per side. Remove from the grill and set aside.

Step Three

Next, place the sliced halloumi cheese on the grill. Grill the cheese until it is marked and beginning to melt, usually for about 2-3 minutes per side. The cheese should be soft but still hold its shape. Remove from the grill and set aside.

Step Four

While the vegetables and cheese are grilling, prepare the lemon-yogurt sauce. In a small bowl combine the Greek yogurt, lemon juice, garlic, lemon zest, chopped mint, honey, remaining salt and pepper. Mix until all ingredients are well incorporated.

Step Five

Assemble your wrap. Lay a tortilla flat, spread a generous amount of the lemon-yogurt sauce across the center. Layer on the grilled vegetables, followed by slices of grilled halloumi. Fold the tortilla wrap, tucking in the edges as you go. Repeat for the remaining tortillas.

Step Six

Once all wraps are assembled, slightly grill each wrap on the grill for about a minute per side, just until the tortilla is crisp and the insides are warm. Serve immediately and enjoy!
