What You’ll Need

  • 1 large honeydew melon
  • 1 cup finely chopped red onion
  • 1 jalapeno pepper, finely diced
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup fresh lime juice
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Method

Step One

Start by cutting the large honeydew melon. Remove the seeds and cut it into half-inch cubes. You should have around 4 cups of diced melon.

Step Two

Take a finely chopped red onion and a finely diced jalapeno pepper. If you prefer less heat, remove the seeds and veins from the pepper before chopping.

Step Three

Chop half a cup of fresh cilantro. If you wish, you can substitute with either fresh basil or mint according to your preference.

Step Four

Now take a large bowl. In it, combine the diced honeydew melon, chopped onion, diced jalapeno, and chopped cilantro.

Step Five

Pour 1/4 cup of fresh lime juice over the honeydew mixture.

Step Six

After that, add two tablespoons of honey over the mixture as well. Then, sprinkle half a teaspoon of salt and half a teaspoon of ground black pepper over everything.

Step Seven

Stir everything together until all ingredients are well combined and evenly coated with the lime juice, honey, salt, and pepper.

Step Eight

For best flavor, let the salsa sit for at least 30 minutes before serving to allow the flavors to meld together.

Step Nine

Give the salsa a quick stir again before serving. If any liquid has accumulated at the bottom of the bowl, you can either stir it back into the salsa or drain it off, according to your preference.
