What You’ll Need

  • 1 cup of granulated sugar
  • 1/2 cup of unsalted butter, softened
  • 2 large eggs
  • 1 tsp of vanilla extract
  • 2 cups of all-purpose flour
  • 2 tsp of baking powder
  • 1/2 tsp of salt
  • 1/2 cup of milk
  • 1 1/2 cups of fresh Jostaberries

Method

Step One

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.

Step Two

In a large bowl, cream together 1 cup of granulated sugar and 1/2 cup of softened unsalted butter until light and fluffy. This can take around 2-3 minutes.

Step Three

Add 2 large eggs one at a time, beating well after each addition. Stir in 1 tsp of vanilla extract.

Step Four

In another bowl, combine 2 cups of all-purpose flour, 2 tsp of baking powder, and 1/2 tsp of salt. Stir the dry ingredients to mix them well.

Step Five

Gradually add the dry ingredients to the creamed butter and sugar mixture, alternating with 1/2 cup of milk. Start and end with the dry ingredients. Mix just until the batter comes together.

Step Six

Gently fold in 1 1/2 cups of fresh Jostaberries until they are evenly dispersed throughout the batter.

Step Seven

Spoon the batter into the prepared muffin tin, filling each liner about two-thirds full.

Step Eight

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
