Lulo and Banana Pancakes Recipe

The Dance of Flavors

What makes this Lulo and Banana Pancakes Recipe so special is the unique dance of flavors that take place with each bite. The lulo, a tropical fruit native to the Andean regions of Colombia and Ecuador, adds a burst of citrusy tang that harmonizes beautifully with the mellow sweetness of ripe bananas. Much like the rhythms of salsa that I teach my dance students here in Miami, this delightful interaction offers a tantalizing taste experience that is both exciting and satisfying.

The Health Kick

Not only do these pancakes taste amazing, but they’re also brimming with health benefits! Lulo is known for its wealth of nutrients, including vitamin C, A, iron, and phosphorus. This delicious fruit is known to improve digestion, skin health, and even boost the immune system. Meanwhile, bananas contribute a generous serving of potassium and vitamin B6, fostering heart health and enhancing brain function. Indulging in this recipe means treating yourself to a plateful of wellness.

You’ve undoubtedly had pancakes before, and perhaps you’ve tried banana pancakes, but have you ever tasted anything as refreshingly unique as these lulo and banana pancakes? Pair them with a steaming cup of Colombian coffee for the perfect tropical breakfast, or serve them alongside a Spanish tortilla for a delightful brunch spread. Don’t limit them to morning meals though – why not consider these pancakes as an after-school snack, or feature them as dessert at your next dinner party? The possibilities are as limitless as your culinary imagination.

So when you try this recipe, you’re not just having a meal; you’re embarking on a culinary dance of flavors that will take you on a joy ride from Miami to the Andean tropics. It’s a delight to share my favorite crossings of cultures, the essence of my own roots, through the pleasure of food. I hope you love these pancakes as much as I do.

What You’ll Need

  • 2 cups all-purpose flour
  • 1 tablespoon white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups buttermilk
  • 1 cup mashed ripe bananas (approximately 2 medium bananas)
  • 1 cup lulo pulp (approximately 4 medium lulos)
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Cooking spray, for the pan
  • Maple syrup, for serving
  • Sliced bananas and lulo, for garnish
ALLERGENS: Gluten (in all-purpose flour), Dairy (in buttermilk and butter), Eggs

Method

Step One

Start by combining the all-purpose flour, white sugar, baking powder, baking soda, and salt in a large bowl. These will serve as your dry ingredients.

Step Two

In a separate bowl, incorporate the ripe mashed bananas, lulo pulp, buttermilk, and eggs. Once these ingredients are well mixed, add the melted butter and vanilla extract. Mix these together to form your wet ingredients.

Step Three

Merge the wet ingredients into the bowl containing the dry ingredients. Stir all ingredients together until you achieve a thick but runny batter. Be mindful not to overmix; it’s okay if a few lumps remain.

Step Four

Preheat your pan or griddle over medium heat and lightly coat the surface with cooking spray to prevent your pancakes from sticking.

Step Five

Utilizing a 1/4 cup for each pancake, pour your batter onto the heated surface. Cook until you see bubbles surfacing on each pancake and the edges start to look set. This normally takes about 2 to 3 minutes.

Step Six

Turn the pancakes over and cook for an additional 1 to 2 minutes or until golden brown and cooked through. Repeat with the remaining batter.

Step Seven

Once all pancakes are cooked and ready, serve them warm with maple syrup. For additional flair, garnish with sliced bananas and lulo.

Step Eight

Enjoy your delicious Lulo and Banana Pancakes alone, with a loved one, or as an excellent surprise for guests!
