Penne with Swiss Chard and Garlic

There’s something inherently comforting about a bowl of pasta, and when you pair it with hearty vegetables like in my Penne with Swiss Chard and Garlic, it truly becomes a soul-warming experience. This recipe brings me back to countless evenings spent with friends and family, gathered around the table after a day of exploring the Rocky Mountains. The simple yet satisfying flavors will make you feel like you’re right there with me in the great outdoors.

A Dish as Nutritious as it is Delicious

What I particularly love about this recipe is how health-conscious it is without compromising on flavor. Swiss chard is a powerhouse of nutrients, loaded with vitamins A, C, and K, as well as magnesium, iron, and potassium. It’s one of those leafy greens that can transform any dish into a nutritious delight. The incorporation of garlic not only adds an aromatic depth but also provides anti-inflammatory benefits, making this dish not just a feast for your taste buds but also a boon for your health.

Perfect for Picky Eaters and Adventurous Palates Alike

Penne with Swiss Chard and Garlic isn’t just for seasoned gourmets; it’s a versatile recipe that appeals to nearly everyone’s taste. The red pepper flakes can be adjusted to add just a hint of spice or none at all, catering to the preferences of the pickiest eaters in your household. Parmesan cheese provides a salty, umami richness, while the zest and juice of the lemon brighten up the entire dish, making it a multi-dimensional flavor experience.

For those who have a love affair with Mediterranean cuisine, this pasta dish might remind you of other classic staples like Spinach and Feta Pasta or even a simpler Pasta Aglio e Olio. The toasted pine nuts, while optional, add a delightful crunch and a subtle nutty flavor that elevates the dish to a whole new level. Consider pairing this dish with a refreshing salad or perhaps some grilled vegetables for a complete meal that everyone will enjoy.

Sometimes, after a rigorous hike or a long day of fishing, there’s nothing better than a quick, hearty, and nutritious meal like this one. It’s the perfect way to refuel and indulge, without the guilt. Plus, if you make a bit extra, you’ll have leftovers that reheat beautifully—making it a convenient option for meal prep too.

What You’ll Need

  • 12 ounces penne pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, thinly sliced
  • 1 large bunch Swiss chard, stems removed and roughly chopped
  • 1/2 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup toasted pine nuts (optional)
  • Zest of 1 lemon
  • Juice of 1/2 lemon
ALLERGENS: Wheat, Milk, Tree nuts (if pine nuts are used)

Method

Step One

Cook the penne pasta in a large pot of boiling salted water according to the package directions until al dente. Drain and set aside.

Step Two

In a large skillet, heat the olive oil over medium heat. Add the thinly sliced garlic and sauté until it turns golden brown, about 1-2 minutes.

Step Three

Add the roughly chopped Swiss chard to the skillet. Cook, stirring occasionally, until the chard is wilted and tender, about 5-7 minutes.

Step Four

Stir in the red pepper flakes, salt, and black pepper to taste. Mix well to combine flavors.

Step Five

Add the cooked penne pasta to the skillet with the Swiss chard and garlic. Toss everything together until the pasta is well coated and heated through.

Step Six

Remove the skillet from heat and stir in the grated Parmesan cheese. Mix until the cheese is melted and evenly distributed.

Step Seven

If using, sprinkle the toasted pine nuts over the pasta. Add the zest of 1 lemon and the juice of 1/2 lemon, tossing everything together once more.

Step Eight

Serve the Penne with Swiss Chard and Garlic immediately, garnished with extra Parmesan cheese if desired. Enjoy!
