Why I Love Indian Potato and Pea Flatbread
Looking at the colorful plate of Potato and Pea Flatbread, I can already feel my taste buds zing. This Indian dish is an all-rounder: comfort food, casual snack, or a party appetizer. It’s this very versatility that I love about it. Just as French fries have become a global comfort food, this Indian version taught me that comfort food transcends borders.
A New Englander’s Take On Indian Cuisine
Being a New Englander, I’m at home preparing sea-salt sprinkled lobster or creamy clam chowder. But every once in a while, my palate yearns for something diverse, something that veers away from local cuisine and traverses halfway across the globe. That’s where a recipe like this Potato and Pea Flatbread comes in. It’s vibrant, full of flavor, and it reminds of the Aloo Mutta Kulcha from a tiny corner shop in India that I stumbled across on my travels.
Family Meal Inspiration
In my efforts to introduce my daughters, Erin and Samantha, to diverse foods from different parts of the world, I’ve always looked for recipes that are easy to prepare, wholesome, and most importantly, delectable. This flatbread recipe won their hearts instantly. It’s a wonderful blend of smooth potatoes mixed with fresh peas and a tingling mix of spices, all framed in a warm, hearty flatbread. The dish also dwells in the heart of my dear friend, and renowned Indian chef, Sanjeev Kapoor, who inspired me to create this recipe.
Being Innovative with the Ingredients
While the recipe asks for specific ingredients, one thing I love to do is play around with the mix. For instance, substitive the all-purpose flour with a gluten-free variant, or the olive oil with coconut oil for an added tropical touch. The spices used in this recipe represent the cornerstone of Indian cuisine but don’t hold back from adding or reducing as per your taste. Remember, the best recipes are those that fit right into your comfort zone while gently nudging you toward something new.
In conclusion, the Potato and Pea Flatbread is more than just a delicious meal. It’s a reminder of my trips around the world and the experiences I’ve had, both as a food lover and a mother. It’s a joyful, food-filled journey, framed in a rustic flatbread.
What You’ll Need
- 2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1/2 teaspoon salt
- 1/2 cup water
- 2 tablespoons olive oil
- 3 medium potatoes, peeled and diced
- 1 cup green peas, fresh or frozen
- 1 tablespoon vegetable oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon chili powder
- 1/2 teaspoon garam masala
- 2 tablespoons fresh cilantro, chopped
- Additional olive oil for brushing on the flatbread
Method
Step One
In a large bowl, blend together the all-purpose flour, whole wheat flour, and salt. To this, slowly add water while stirring until a dough starts to form. Knead this mixture until smooth, then cover it with a damp cloth and allow it to rest for an hour.
Step Two
While the dough is resting, prepare the filling. Start by boiling the diced potatoes and green peas until they are tender. Once cooked, drain these vegetables and set them aside.
Step Three
Heat up the vegetable oil in a pan over medium heat, then add your chopped onions and cook until they become translucent. Once cooked, add the minced garlic and grated ginger and stir until their fragrances are released.
Step Four
To the onion mix in the pan, add the boiled potatoes and peas, ground coriander, ground turmeric, chili powder, and garam masala. Mix this well until everything is combined and the spices are evenly distributed, then turn off the heat and mix in the fresh cilantro.
Step Five
After the dough has rested, divide it into small equal portions. Roll out each portion into a flat circle, then place a spoonful of your prepared filling in the center. Fold the edges of the dough over the filling and seal them, then roll it out again into a flat, filled disc.
Step Six
Heat a griddle or a flat pan over medium heat. Brush each side of your filled flatbread with olive oil, then cook each side until golden brown. Your Potato and Pea Flatbread is now ready to be served and enjoyed.
