Zucchini Fritters

Southern Fried Chicken

What You’ll Need

  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup cold water
  • Salt, to taste
  • 1/2 tablespoon baking powder
  • 12 pumpkin flowers
  • Vegetable oil, for frying
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar (optional)
ALLERGENS: Wheat, Eggs

Method

Step One

In a bowl, combine the flour, baking powder and a pinch of salt. Add the eggs and the cold water. Whisk it together until it has a smooth consistency. This will be your batter.

Step Two

Rinse the pumpkin flowers under cold water, remove the stems and pat them dry using a kitchen towel.

Step Three

Heat a generous amount of vegetable oil in a deep frying pan or deep fryer until it reaches approximately 375F.

Step Four

Dip each pumpkin flower into the batter to evenly coat. Carefully place them into the hot oil. Fry the flowers until golden brown, which should take about 3 minutes on each side.

Step Five

Once they are done frying, transfer the fritters to a plate covered in paper towel to drain excessive oil.

Step Six

Sprinkle each of the hot fritters with granulated and powdered sugar. They are done and ready to serve.
