Roasted Turmeric Chickpeas

When I first experimented with Roasted Turmeric Chickpeas, I was struck by how their vibrant color mirrored the shades of a Colorado sunset. This recipe encapsulates so much of what I love about cooking—simple ingredients, effortless preparation, and a satisfying crunch that keeps you coming back for more.

A Touch of the Rocky Mountains

Inspired by my life in the Rocky Mountains, I’m always on the lookout for recipes that are as hearty and invigorating as a brisk mountain hike. Roasted Turmeric Chickpeas fit the bill perfectly. They are quick and easy to make, making them ideal for those spontaneous weekend adventures or cozy nights in with my partner, Gordon. The turmeric not only adds a vibrant golden hue but also brings anti-inflammatory properties to the table, which is a boon for anyone leading an active lifestyle.

Chickpeas themselves are a wonderful source of plant-based protein and fiber, making this dish not just tasty but also incredibly nutritious. Pair these with a simple green salad or toss them into a wrap for a delightful, crunchy element. They can also serve as a fantastic, guilt-free snack on their own. For similar roasted snacks, you might also enjoy spiced nuts or even other roasted legumes like Roasted Spicy Lentils.

Perfect Pairings

Roasted Turmeric Chickpeas are delightfully versatile. They pair exceptionally well with dishes like Mediterranean Lemongrass Chicken or a fresh quinoa salad. You might find them similar to roasted soybeans or even spiced mixed nuts. Their robust seasoning and satisfying crunch elevate the simplest of dishes, transforming a basic meal into something extraordinary.

Besides their versatility, the health benefits of these little legumes are nothing short of impressive. Chickpeas are rich in essential vitamins and minerals, including iron, magnesium, and folate. The turmeric, cumin, and paprika not only contribute to their incredible flavor but also add a dose of antioxidants and anti-inflammatory compounds to your diet.

Discovering and sharing recipes that bring such joy and well-being into our lives is what makes my culinary journey so rewarding. Give these Roasted Turmeric Chickpeas a try, and I guarantee they will become a staple in your snack rotation, just as they have in mine and Gordon’s.

What You’ll Need

  • 2 cups canned chickpeas (drained and rinsed)
  • 2 tablespoons olive oil
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground paprika
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon lemon zest
ALLERGENS: Chickpeas

Method

Step One

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step Two

In a large bowl, combine the drained and rinsed chickpeas with the olive oil. Mix well to ensure all the chickpeas are evenly coated with the oil.

Step Three

Add the ground turmeric, ground cumin, ground paprika, ground black pepper, garlic powder, onion powder, sea salt, and lemon zest to the bowl. Toss the chickpeas until they are evenly coated with the spices and lemon zest.

Step Four

Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Make sure they are well spaced out to ensure even roasting.

Step Five

Roast the chickpeas in the preheated oven for 25-30 minutes, or until they are golden brown and crispy. Stir the chickpeas halfway through the cooking time to ensure they roast evenly.

Step Six

Remove the baking sheet from the oven and allow the chickpeas to cool slightly before serving. Enjoy your Roasted Turmeric Chickpeas as a snack or add them to your favorite salads and dishes.
