Mountain Fare with a European Twist

Being from the Rocky Mountains and spent a significant part of my life relishing game meats, trout, and other hearty mountain fares, I have seldom shied away from innovation in my kitchen. This rustic pizza recipe, however, brings a European twist on my table, combining the robustness of mountain cuisine with an Italian favorite. The distinctive flavors of the prosciutto and the piquant lamb’s lettuce give me a feeling of being in a quaint Italian vineyard, every time I take a bite. The pear and goat cheese lend an unexpected yet refreshing lift to the flavor profile, making it an exotic treat.

The Health Factor

What’s more, this isn’t just a guilty indulgence; it’s bursting with health benefits as well. Rich in calcium from all the cheese, it ensures bone health. The prosciutto is a great source of protein, while the lamb’s lettuce, packed with iron and vitamins, adds a boost ofnutrition. You also have the pear, contributing dietary fibers for better digestion. Healthy eating never tasted this good!

Side dishes? This Rustic pizza with lamb’s lettuce and prosciutto sits wonderfully beside Marinated Zucchini Salad, or even with a leafy green salad. It’s also reminiscent of the renowned Prosciutto Arugula Pizza at Trattoria Aruna in Milan. Truth be told, it’s so gourmet you could easily place it in a high-end pizzeria and it wouldn’t be out of place.

Rustic pizza with lamb’s lettuce and prosciutto, thus, checks all the right boxes for me – a culinary adventure that satisfies taste buds while keeping health in check. Try it out, it is definitely worth the experience. Happy Cooking!

What You’ll Need

  • 1 batch pizza dough
  • 1 1/2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups lamb’s lettuce
  • 8 slices of prosciutto
  • 1 pear, thinly sliced
  • 1/2 cup crumbled goat cheese
  • 1/4 cup balsamic reduction
  • Extra virgin olive oil for brushing
  • Salt and pepper to taste
ALLERGENS: Gluten (in pizza dough), Dairy (in mozzarella cheese, Parmesan cheese and goat cheese), Soy (in some types of marinara sauce), Pork (in prosciutto)

Method

Step One

Start off by preheating your oven to 475 degrees Fahrenheit. If you have a pizza stone, ensure that it’s in the oven while heating.

Step Two

Roll out your pizza dough on a well-floured surface to your desired thickness. Transfer the rolled out dough onto a piece of parchment paper or a pizza peel if you have one.

Step Three

Spread your marinara sauce evenly on your pizza dough, leaving a small edge for the crust. Evenly distribute the shredded mozzarella and Parmesan cheese on top of the sauce.

Step Four

Arrange the slices of prosciutto on top of the cheese. Add the sliced pears and scatter the crumbled goat cheese evenly over the top.

Step Five

Transfer your prepared pizza, with the parchment paper, onto the preheated pizza stone in the oven. If you don’t have a pizza stone, use a baking sheet. Bake for about 10-12 minutes, or until the crust is golden and the cheese is bubbling and beginning to brown.

Step Six

Once the pizza is done, take it out from the oven and let it cool for a few minutes. In the meantime, lightly dress the lamb’s lettuce with some extra virgin olive oil, salt, and pepper.

Step Seven

Scatter the dressed lettuce over the top of the baked pizza. Drizzle the balsamic reduction over the top, cut into slices, and serve. Enjoy your rustic pizza with lamb’s lettuce and prosciutto right away!
