What You’ll Need
- 1 cup fresh sculpit leaves (or arugula if sculpit is unavailable)
- 1 1/2 cups assorted fresh fruits (e.g., strawberries, blueberries, peaches, sliced thinly)
- 1 unbaked 9-inch pie crust
- 5 large eggs
- 1 1/2 cups half-and-half
- 4 oz goat cheese, crumbled
- 1/2 cup shredded mozzarella cheese
- 1 tablespoon all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 tablespoon olive oil
Method
Step One
Preheat your oven to 375°F (190°C). Place the unbaked pie crust in a 9-inch pie dish and set it aside.
Step Two
In a small pan, heat the olive oil over medium heat. Add the fresh sculpit leaves (or arugula) and sauté for about 2-3 minutes until wilted. Remove from heat and let cool.
