What You’ll Need
- 2 cups Basmati rice
- 6 cups water
- 4 tablespoons vegetable oil
- 2 onions, finely chopped
- 2 green chillies, chopped
- 1 inch piece ginger, grated
- 4 cloves of garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chilli powder
- 1 teaspoon garam masala
- 2 cups mixed vegetables (carrots, peas, capsicum), chopped
- 2 cups boiled potatoes, cubed
- 1 1/2 cups fresh coriander leaves, chopped
- Salt to taste
- 2 cups whole wheat flour
- Water for kneading dough
- Butter for brushing the rotis
- 6 tablespoons of mayonnaise
- 6 servings of your favorite green chutney
- 2 cups shredded cabbage for topping
- 2 cups shredded carrots for topping
- 2 cups chopped tomatoes for topping
Method
Step One
First, start by washing the 2 cups Basmati rice until the water runs clear. Then, cook the rice in 6 cups of water. Once the rice is cooked, drain and set it aside for later.
Step Two
While the rice is cooking, heat 4 tablespoons of vegetable oil in a pan over medium heat. Add in the 2 finely chopped onions, 2 chopped green chilies, the grated piece of ginger, and 4 minced cloves of garlic. Sauté these ingredients until the onions turn golden brown.
Step Three
Add 1 teaspoon of cumin seeds to the pan and fry them until they start to crackle. Then, add 1 teaspoon each of turmeric powder, red chili powder, and garam masala. Mix well.
Step Four
Add the chopped mixed vegetables and boiled potatoes, mix well, then cover the pan and let everything simmer for about 5 minutes or until the vegetables are cooked.
Step Five
Once the vegetables are cooked, add chopped coriander leaves, salt to taste, and the cooked rice. Mix everything well and set aside.
Step Six
In a separate bowl, add 2 cups of whole wheat flour and slowly add water while kneading until you have a soft and pliable dough. Divide the dough into 6 equal portions.
Step Seven
Roll each portion of the dough into a thin round roti and cook it on a preheated skillet until both sides are lightly browned. Brush each side of the roti with butter.
Step Eight
Spread a tablespoon of mayonnaise over each hot roti, then spoon the vegetable and rice mixture into the centre. Add a serving of green chutney and top with shredded cabbage, shredded carrot, and chopped tomatoes.
Step Nine
Roll up the roti to form a wrap. Cut the roll in half, and your Vegetable Frankie Roll Bowl is ready to be served!
