Nectarine-Blueberry Pie

There’s something truly magical about the combination of nectarines and blueberries that makes this Nectarine-Blueberry Pie a family favorite in our home. With its perfect blend of sweet and tart flavors, this pie creates an explosion of taste that brings back fond memories of summer days spent at the farmers’ market with my daughters, Erin and Samantha, searching for the freshest fruits Maine has to offer.

A Symphony of Flavors

This pie is more than just a dessert; it’s a celebration of peak season fruits and the harmony they create. The nectarines bring a luscious sweetness and a soft, almost creamy texture, while the blueberries add a necessary tartness and beautiful burst of juice with every bite. The combination of granulated and brown sugar with a touch of lemon juice accentuates the natural flavors of the fruit, making each slice a delightful indulgence.

Nutritional Benefits

While it’s a treat to enjoy this pie, it’s comforting to know it brings some nutritional perks to the table. Blueberries are well-known for their antioxidant properties, promoting heart health and reducing inflammation. Nectarines, rich in vitamins A and C, contribute to strong immune function and promote healthy skin. These fruits paired together form a sweet treat that you can feel good about sharing with your family.
Another reason I adore this recipe is for its sheer versatility. The Nectarine-Blueberry Pie pairs wonderfully with a scoop of vanilla ice cream for a cooling contrast or a dollop of whipped cream for added richness. For a complete meal, serve it alongside grilled seafood dishes like salmon or scallops, drawing a delicious balance between savory and sweet. If you’re a fan of this pie, you might also enjoy similar fruit-based desserts like peach cobbler or blueberry tart, which share a common thread of juicy, fresh ingredients enveloped in a flaky crust.
There’s a particular joy in making this pie that resonates with my coastal roots. Rolling out the pie crust, layering the vibrant fruit mixture, and the anticipation as it bakes to golden perfection – it evokes a sense of tradition and warmth. It’s a reminder that the simplest ingredients, when combined thoughtfully, can create something extraordinary.

What You’ll Need

  • 1 1/2 cups fresh blueberries
  • 3 medium nectarines, sliced
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup cornstarch
  • 1 tbsp lemon juice
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 package refrigerated pie crusts (2 crusts)
  • 1 tbsp butter, cut into small pieces
  • 1 egg, beaten (for egg wash)
  • 1 tbsp coarse sugar (optional, for topping)
ALLERGENS: Egg, Wheat, Milk

Method

Step One

Preheat your oven to 400°F (200°C).

Step Two

In a large bowl, combine the fresh blueberries, sliced nectarines, granulated sugar, brown sugar, cornstarch, lemon juice, ground cinnamon, ground nutmeg, salt, and vanilla extract. Mix well until the fruit is evenly coated with the mixture.

Step Three

Unroll one of the pie crusts and fit it into a 9-inch pie dish. Press it firmly into the bottom and sides of the dish.

Step Four

Pour the fruit mixture into the pie crust. Dot the filling with small pieces of butter.

Step Five

Unroll the second pie crust and place it over the filling. Trim any excess crust, and then crimp the edges together to seal. Cut a few small slits in the top crust to allow steam to escape.

Step Six

Brush the top crust with the beaten egg. If desired, sprinkle with coarse sugar for extra texture and sweetness.

Step Seven

Bake the pie in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling. If the crust begins to brown too quickly, cover the edges with aluminum foil to prevent burning.

Step Eight

Allow the pie to cool on a wire rack before serving. Enjoy your Nectarine-Blueberry Pie warm or at room temperature!
