What You’ll Need

  • 2 medium celeriac bulbs (about 2.5 pounds total)
  • 1 large apple (preferably Granny Smith)
  • 1 large pear (preferably Bosc)
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup grated Gruyere cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Method

Step One

Preheat your oven to 375°F (190°C). Grease a baking dish with a bit of butter or non-stick cooking spray.

Top with the remaining Gruyere and Parmesan cheese. Evenly spread the breadcrumbs over the top.

Step Ten

Cover the baking dish with aluminum foil and bake for 45 minutes. Then, remove the foil and bake for an additional 20-25 minutes until the top is golden brown and the celeriac is tender.

Step Eleven
