Endive and Apple Salad with Turkey

One of my all-time favorite recipes to make is the Endive and Apple Salad with Turkey. Growing up in Louisiana with a blend of rich Creole and refined French culinary traditions, I’ve always been drawn to dishes that balance robust flavors with a touch of elegance. This recipe doesn’t just taste incredible; it is a vibrant fusion of tastes and textures that will delight your palate and elevate your meal.

A Symphony of Flavors and Textures

The combination of crisp Belgian endive and tart Granny Smith apples provides a refreshing base for this salad. The dried cranberries add a wonderful hint of sweetness while the chopped walnuts bring a satisfying crunch. The diced turkey adds heartiness to the dish, making it a perfect light yet filling meal. Drizzled with a zesty lemon juice and extra-virgin olive oil dressing, each bite is a delightful explosion of flavors.

A Nutritious Delight

What makes the Endive and Apple Salad with Turkey stand out isn’t just its taste, but also its health benefits. Endive is packed with vitamins and fiber, aiding in digestion and promoting a healthy gut. Apples are rich in antioxidants and essential nutrients, while cranberries are known for their anti-inflammatory properties. Walnuts contribute beneficial omega-3 fatty acids, and turkey provides a lean source of protein. This salad is a nutrient-dense meal that supports your overall well-being.

Perfect Pairings and Similar Dishes

This versatile salad can be enjoyed on its own or paired with a simple grilled chicken or fish dish for a heartier meal. The flavors are reminiscent of a classic Waldorf salad, but with an added twist of endive and turkey. It also complements a variety of soups, such as a hearty butternut squash or a light and refreshing gazpacho.

If you’re looking for variations, consider substituting the turkey with grilled chicken or even tofu for a vegetarian option. The optional addition of crumbled blue cheese elevates the flavors even further, adding a creamy and tangy note that beautifully contrasts with the sweetness of the apples and cranberries.

What You’ll Need

  • 3 heads Belgian endive
  • 2 large Granny Smith apples
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts
  • 2 tablespoons lemon juice
  • 1/4 cup chopped fresh parsley
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste
  • 2 cups cooked turkey, diced
  • 1/2 cup crumbled blue cheese (optional)
ALLERGENS: Walnuts, Turkey, Blue Cheese (optional)

Method

Step One

Trim the ends of the Belgian endive heads and separate the leaves. Wash and dry the leaves thoroughly. Cut the leaves into bite-sized pieces and place them in a large salad bowl.

Step Two

Core and slice the Granny Smith apples into thin wedges. Immediately toss the apple slices with the lemon juice to prevent browning. Add the apples to the salad bowl with the endive.

Step Three

Add the dried cranberries, chopped walnuts, and chopped fresh parsley to the salad bowl. Toss gently to combine.

Step Four

In a small bowl, whisk together the extra-virgin olive oil, apple cider vinegar, honey, salt, and pepper until well combined. Drizzle the dressing over the salad and toss to coat all the ingredients evenly.

Step Five

Add the diced cooked turkey to the salad and toss gently to combine. If desired, sprinkle the crumbled blue cheese over the top.

Step Six

Serve the Endive and Apple Salad with Turkey immediately, or chill in the refrigerator for up to an hour before serving for a crisper texture.
