What You’ll Need

  • 4 cups feijoas, peeled and chopped
  • 2 cups granulated sugar
  • 1/4 cup lemon juice
  • 1/4 cup water
  • 1 packet (1.75 oz) fruit pectin

Method

Step One

Combine the peeled and chopped feijoas, granulated sugar, lemon juice, and water in a large pot. Stir the ingredients together to mix well.

Step Two

Place the pot over medium heat. Cook the mixture, stirring occasionally, until the sugar has fully dissolved. This should take about 5 minutes.

Step Three

Bring the mixture to a boil. Continue boiling for 10 minutes, stirring frequently to prevent the fruit from sticking to the bottom of the pot.

Step Four

Add the fruit pectin to the boiling mixture. Stir until the pectin is completely dissolved. Continue cooking for another 1-2 minutes.

Step Five

Remove the pot from heat. Use a ladle to carefully pour the hot jam into sterilized jars, leaving about 1/4 inch of headspace at the top.

Step Six

Seal the jars with lids and process them in a boiling water bath for 10 minutes. Remove the jars from the water bath and let them cool completely.

Step Seven

Once cooled, check the seal on each jar. Store the sealed jars in a cool, dark place. Any unsealed jars should be refrigerated and used within a few weeks.
