Deep Rooted Comfort

Pork Stew with Epazote

From my childhood days in Louisiana kitchens to my culinary travels through France, food has always been my way of connecting with tradition and innovation. The first time I recreated this Pork Stew with Epazote, it felt like a tapestry of my life’s culinary influences. Imagine the richness of Creole, the delicacy of French, and the vibrant zest of Mexican cuisine all in one pot—it’s a symphony of flavors that speaks directly to my soul.

A Flavorful Hearty Hug

This pork stew is more than just a dish; it’s an embrace. The marriage of tender pork shoulder with an array of fresh vegetables creates a heartwarming experience. While each ingredient brings its unique essence, what truly elevates this dish is the inclusion of fresh epazote leaves. Epazote, a herb traditionally used in Mexican cooking, imparts an earthy, almost citrus-like flavor that you won’t find in any other green. It’s an unexpected twist that transforms a familiar stew into an unforgettable meal.

What I love most about the Pork Stew with Epazote is its versatility. It’s similar in ambiance to dishes like Louisiana Seafood Gumbo or a hearty French Beef Stew, which can be enjoyed as a standalone meal. But it also pairs wonderfully with fresh tortillas or a side of jasmine rice for a more complete dining experience. If you’re in the mood for something lighter, a simple greens salad dressed with lime vinaigrette complements it beautifully.

An Assortment of Health Benefits

Health-conscious eaters will also appreciate the plethora of nutrients packed into this stew. The dish is cooked using lean pork shoulder, which is an excellent source of protein and essential vitamins like B6 and B12. The variety of vegetables—zucchini, carrots, potatoes, green beans, and bell pepper—not only add a burst of color but also provide a rich supply of fiber, vitamins, and antioxidants. The dish is also low in added fats, thanks in part to the use of vegetable oil and fresh herbs for flavoring.

Then there’s the epazote itself. Although it’s often overshadowed by more familiar herbs like cilantro or parsley, epazote is packed with medicinal properties. It’s known to aid in digestion and has anti-inflammatory benefits. For a twist of zest, fresh lime wedges not only add a refreshing note but also boost Vitamin C intake.

And if we talk about personal touches, well, the use of jalapeño pepper brings in just the right amount of heat to balance out the robust flavors. Top it off with a sprinkle of freshly chopped cilantro, and you have a dish that’s not just comforting but also nourishing.

So, whether you’re looking to create a memorable family dinner, or simply want to lose yourself in the nostalgia of rich flavors, this Pork Stew with Epazote is your go-to recipe. Trust me, it’s like wrapping yourself in a cozy quilt of culinary tradition and modern flair.

  • 4 cups chicken broth
  • 1.5 lbs tomatoes, chopped
  • 1 large zucchini, chopped
  • 2 large carrots, chopped
  • 2 cups potatoes, chopped
  • 1 cup green beans, cut into 1-inch pieces
  • 1 bell pepper, chopped
  • 1 jalapeño pepper, chopped
  • 1/4 cup fresh epazote leaves, chopped

  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 lime, cut into wedges
  • Fresh cilantro for garnish
ALLERGENS: Pork, Garlic, Tomato

Method

Step One

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the pork shoulder cubes and season with salt and pepper. Brown the pork on all sides until golden, about 5-7 minutes.

Step Two

Add the finely chopped onion and minced garlic to the pot. Cook until the onion is translucent and fragrant, about 3-4 minutes.

Step Three

Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 45 minutes, or until the pork is tender.

Step Four

Add the chopped tomatoes, zucchini, carrots, potatoes, green beans, bell pepper, jalapeño pepper, epazote leaves, bay leaf, ground cumin, and dried oregano to the pot. Stir to combine.

Step Five

Season the stew with additional salt and pepper to taste. Cover the pot and let it simmer for another 30-40 minutes, or until the vegetables are tender and the flavors are well combined.

Step Six

Remove the bay leaf from the pot and discard it. Adjust seasoning if necessary.

Step Seven

Serve the pork stew hot, garnished with fresh cilantro and lime wedges for squeezing over the stew. Enjoy!
