  • 3 large onions, diced
  • 3 cloves garlic, minced

Step One

Using an immersion blender, blend the soup until smooth. If you do not have an immersion blender, you can carefully transfer the soup to a blender in batches and blend until smooth.

Step Six

Return the soup to the pot (if using a blender). Stir in the heavy cream, and season with salt and pepper to taste. Let the soup simmer for another 5 minutes to heat through.

Step Seven

Ladle the soup into bowls. Garnish with fresh chopped chives and croutons if desired. Serve hot.
