What You’ll Need

  • 2 cups basmati rice
  • 4 cups water
  • 1/2 teaspoon saffron threads
  • 1/4 cup warm milk
  • 1/4 cup ghee or butter
  • 1/2 cup slivered almonds
  • 1/2 cup raisins
  • 1/4 cup pistachios
  • 1/4 cup cashews
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon salt
  • 1/4 cup sugar (optional)

Method

Step One

Rinse the basmati rice thoroughly under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming sticky.

Step Two

Soak the rinsed rice in water for about 30 minutes. This helps the grains to cook evenly. Drain the rice after soaking.

Step Three

In a small bowl, soak the saffron threads in the warm milk. Allow it to steep for about 10-15 minutes to release its color and flavor.

Step Four

In a large pot, bring 4 cups of water to a boil. Add the drained basmati rice, salt, and ground cardamom. Stir to combine.

Step Five

Reduce the heat to low, cover the pot with a tight-fitting lid, and simmer the rice for about 15-20 minutes or until it is tender and all the water has been absorbed.

Step Six

While the rice is cooking, heat the ghee or butter in a skillet over medium heat. Add the slivered almonds, raisins, pistachios, and cashews. Sauté for about 3-4 minutes until the nuts are lightly toasted and the raisins are plump. Remove from heat and set aside.

Step Seven

Once the rice is fully cooked, gently fluff it with a fork. Pour the saffron milk mixture over the rice and carefully mix it in to evenly distribute the saffron threads.

Step Eight

Add the toasted nut and raisin mixture to the rice. If using sugar, sprinkle it over the rice and gently fold everything together to combine.

Step Nine

Cover the pot again and let the saffron rice sit for about 5 minutes to allow the flavors to meld.

Step Ten

Serve the saffron rice warm as a fragrant and colorful side dish or main course. Enjoy!
