What You’ll Need
- 12 rice paper wrappers
- 3 cups fresh Vietnamese Coriander leaves, washed and stems removed
- 2 large ripe mangoes, peeled and thinly sliced
- 2 large ripe avocados, peeled and thinly sliced
- 2 cups of fresh strawberries, hulled and thinly sliced
- 1 cup of fresh mint, chopped
- 1 cup of fresh basil, chopped
- 1 cucumber, peeled and julienned
- 2 large carrots, peeled and julienned
- 1 medium red bell pepper, de-seeded and thinly sliced
- 1/2 cup sesame seeds, toasted
- 1/2 cup hoisin sauce for dipping
- 1/4 cup creamy peanut butter
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar or apple cider vinegar
Method
Step One
Begin by softening the rice paper wrappers. Fill a large dish with warm water. Dip one wrapper into the water, let it soften for a second, and lay flat on a clean surface.
Step Two
Pick a handful of Vietnamese coriander leaves, making sure to remove the stems. Place a small pile of the leaves in the center of the softened rice paper wrapper.
Step Three

Prepare the dip by mixing hoisin sauce, creamy peanut butter, soy sauce and rice vinegar (or apple cider vinegar) in a small bowl. Stir until you have a smooth, well-combined mixture.
Step Eight
