What You’ll Need

  • 12 rice paper wrappers
  • 3 cups fresh Vietnamese Coriander leaves, washed and stems removed
  • 2 large ripe mangoes, peeled and thinly sliced
  • 2 large ripe avocados, peeled and thinly sliced
  • 2 cups of fresh strawberries, hulled and thinly sliced
  • 1 cup of fresh mint, chopped
  • 1 cup of fresh basil, chopped
  • 1 cucumber, peeled and julienned
  • 2 large carrots, peeled and julienned
  • 1 medium red bell pepper, de-seeded and thinly sliced
  • 1/2 cup sesame seeds, toasted
  • 1/2 cup hoisin sauce for dipping
  • 1/4 cup creamy peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar or apple cider vinegar
ALLERGENS: Sesame seeds, hoisin sauce, peanut butter, soy sauce

Method

Step One

Begin by softening the rice paper wrappers. Fill a large dish with warm water. Dip one wrapper into the water, let it soften for a second, and lay flat on a clean surface.

Step Two

Pick a handful of Vietnamese coriander leaves, making sure to remove the stems. Place a small pile of the leaves in the center of the softened rice paper wrapper.

Step Three

Add sliced mango, avocado and strawberries on top of the coriander leaves. Also, put some chopped mint and basil for extra flavor.

Step Four

Next, add a pinch of julienned cucumber, carrots and thinly sliced red bell pepper on top of the fruit.

Step Five

Sprinkle toasted sesame seeds over the vegetables and fruits, then fold in the sides of the rice paper wrapper, and roll tightly to enclose all the fillings. Repeat with the remaining wrappers and fillings.

Step Six

Keep the filled spring rolls moist by covering them with a damp clean kitchen towel whilst you make the rest of your spring rolls.

Step Seven

Prepare the dip by mixing hoisin sauce, creamy peanut butter, soy sauce and rice vinegar (or apple cider vinegar) in a small bowl. Stir until you have a smooth, well-combined mixture.

Step Eight

Arrange your finished Vietnamese Coriander Spring Rolls on a platter, along with a serving dish for the dip that you made in Step Seven. Enjoy your meal!
