What You’ll Need

  • 1 cup sugar
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2 cups milk
  • 4 large eggs, separated
  • 2 teaspoons vanilla extract
  • 4-5 ripe bananas, sliced
  • 1 box vanilla wafers (approximately 12 ounces)
  • 3/4 cup granulated sugar (for meringue)
  • 1/4 teaspoon cream of tartar (for meringue)

Method

Step One

In a medium saucepan, whisk together 1 cup sugar, flour, and salt. Gradually whisk in milk until smooth.

Step Two

Cook over medium heat, whisking constantly, until the mixture thickens and begins to bubble.

Step Three

In a small bowl, lightly beat the egg yolks. Gradually whisk in about 1 cup of the hot milk mixture into the yolks, then return the egg mixture to the saucepan. Cook for another 2 minutes, whisking constantly.

Step Four
