Pea, Avocado, and Bacon Salad

There’s something incredibly satisfying about the blend of freshness and richness in this Pea, Avocado, and Bacon Salad. As a native New Yorker, I’m constantly inspired by the mosaic of flavors that this city offers, and this dish is a perfect example of that delightful diversity. The combination of sweet peas, creamy avocados, and savory bacon creates a harmony that is both vibrant and comforting.

A Balance of Flavors

One of the reasons this recipe has captured my heart is its perfect equilibrium of textures and tastes. The peas add a delightful crunch, the avocados bring a silky smoothness, and the bacon adds a crisp, salty touch that makes every bite a new experience. The tangy red onions and fresh cilantro elevate the flavor profile even further, while the lemon juice and olive oil provide a light, refreshing finish.

A Nutrient-Rich Choice

Beyond the delightful taste, this Pea, Avocado, and Bacon Salad is also packed with nutritional benefits. Peas are an excellent source of plant-based protein and fiber, which aids digestion and keeps you feeling full longer. Avocados contribute healthy fats and a range of essential vitamins and minerals, including potassium and vitamin E. Additionally, the olive oil offers heart-healthy monounsaturated fats, making this salad not just a treat for your taste buds, but also a boon for your body.

Perfect Pairings

This salad can stand on its own as a delicious, filling meal, but it also pairs wonderfully with other dishes. Try serving it alongside a grilled salmon or a roast chicken to create a well-rounded, gourmet dinner. Its vibrant flavors also make it an excellent companion to a light, floral white wine or a zesty sparkling water.

If you’re a fan of other veggie-based salads, you might find this recipe reminiscent of a classic three-bean salad, but with a fresher, more indulgent twist. Or, consider it a heartier cousin to the ubiquitous avocado toast; it’s got all the creaminess and none of the bread, making it a great low-carb alternative.

Incorporating this Pea, Avocado, and Bacon Salad into your meal rotation ensures a delightful fusion of flavors and a healthy mix of nutrients. It’s a testament to how simple ingredients can come together to create something truly extraordinary—a true reflection of the culinary magic that inspired me growing up in NYC. Bon appétit!

What You’ll Need

  • 3 cups fresh or frozen peas
  • 3 ripe avocados, diced
  • 12 slices of bacon, cooked and crumbled
  • 1/2 cup red onion, finely chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh lemon juice
  • 1/4 cup olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
ALLERGENS: None

Method

Step One

In a large pot, bring some water to a boil. If using fresh peas, add them to the boiling water and cook for about 3 minutes, or until they are tender but still crisp. If using frozen peas, cook according to the package instructions. Once done, drain and rinse the peas under cold water to stop the cooking process. Place the peas in a large mixing bowl.

Step Two

In the same mixing bowl, add the diced avocados, cooked and crumbled bacon, finely chopped red onion, and chopped fresh cilantro. Gently stir to combine all ingredients.

Step Three

In a small mixing bowl, whisk together the fresh lemon juice, olive oil, salt, and black pepper until well combined.

Step Four

Pour the dressing over the salad mixture and gently toss to coat all the ingredients evenly. Ensure the dressing is well distributed throughout the salad.

Step Five

Serve the salad immediately, or cover and refrigerate it for up to 2 hours before serving. Enjoy your Pea, Avocado, and Bacon Salad!
