What You’ll Need
- 3 cups of cooked jasmine rice
- 2 tablespoons of vegetable oil
- 1 large onion, finely chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1/2 cup of carrot, finely diced
- 1 cup of peas
- 1/2 cup of fresh pineapple, diced
- 2 tablespoons of soy sauce
- 1 tablespoon of fish sauce
- 1/2 cup of Vietnamese coriander, finely chopped
- 6 large eggs
- Salt, to taste
- Pepper, to taste
Method
Step One
Heat the vegetable oil in a large wok or skillet over medium-high heat. Once the oil is hot, add the finely chopped onion. Sauté the onion until it begins to turn translucent.
Step Two
Add the minced garlic to the skillet and continue to sauté for about a minute, or until the garlic is fragrant. Be careful not to let the garlic burn and turn brown, as this will give your dish a bitter taste.
Step Three
Add the diced red bell pepper and finely diced carrot to the skillet. Continue to sauté for a couple minutes until the vegetables start to soften.
Step Four

Add the soy sauce, fish sauce, and finely chopped Vietnamese coriander to the skillet. Stir well to combine. Season with salt and pepper to taste.
